OIL FRIED DUCK

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the duck, cover, and cook for 1 hour at low heat.
  4. Stir in the water, bouillon cube, beer (if using), and thyme.
  5. Let it simmer for 1 hour, then remove from heat.
  6. Use a slotted spoon to remove the duck from the pot.
  7. Cook the duck in a pan with butter and cornstarch until golden brown.
  8. Serve hot, garnished with chopped herbs and a drizzle of soy sauce.
