How to Make Roasted Duck the French Way

  1. Preheat your oven to 350°F (175°C).
  2. Place the duck on a rack in a roasting pan. Add the green garlic, parsley, thyme, salt, and pepper to the pan.
  3. Film the duck with oil and place it in the oven. Pour the red wine into the roasting pan and cover it with foil.
  4. Boil the chicken broth in a separate pot and let it simmer until it reaches boiling point. Let it cook for about 1 hour.
  5. Add the flour and nutmeg to the pan and stir until everything is well combined. Transfer the mixture to the oven and roast for about 1 hour.
  6. After the duck is done, remove it from the oven. Pour off the juices and return the duck to the oven. Bake for an additional 30 minutes.
  7. Let the duck rest for 10 minutes before serving.
